Trail Bytes Feb. 2026: Chickeny-Chicken with Creamy Spinach Sauce

Hello Chef,

Is it possible to make ground chicken taste more “chickeny?”

That was the question I set out to answer for this month’s newsletter.

As you know, if you add a starch like breadcrumbs, ground oats, or ground chickpeas to ground chicken before cooking and dehydrating it, you will enjoy tender chicken on the trail.

The trick to boosting the chicken flavor was to cook chickpeas in chicken broth with a few other seasonings and blend the chickpeas into hummus. Once the hummus was dry, I ground it into powder. Then I added half a cup of hummus powder per pound of ground chicken.

How was it?

My favorite taste-tester said, “tastes like chicken.”

Perhaps the extra-chickeny flavor of the chicken was hard to notice in the creamy spinach sauce, but the bite was just right, and Dominique requests this meal for our Valentine’s Day hike coming up next weekend.

Chicken with Creamy Spinach Sauce

The new recipe features a parmesan-style cream sauce made from common powdered ingredients and seasonings. It’s easy to prepare the meal in one pot, or you can rehydrate it in a Mylar bag or Thermos Food Jar.

An arctic blast blew snow and icy conditions into Georgia in January. It felt more like Switzerland. We lost water for a day due to a cracked water pipe running underground from the well, but otherwise we had no loss of power. It was good to have a supply of dried meals and water on hand, just in case.

We still got out for several hikes and braved the cold with these cuddly critters.
